Professional Qualifications Required

Job Details / Responsibilities

Key Responsibilities

Quality & Food Safety Monitoring

  • Monitor critical control points (CCPs) as defined in the HACCP plan (e.g., temperature control, sanitation, metal detection, product handling)
  • Perform routine quality checks on raw materials, in-process products, and finished seafood products
  • Verify product freshness, appearance, odor, texture, size, weight, and labeling accuracy
  • Ensure proper handling of seafood to prevent cross-contamination and temperature abuse

HACCP, GMP & SSOP Compliance

  • Complete HACCP monitoring records accurately and in real time
  • Verify compliance with Good Manufacturing Practices (GMPs) and Sanitation Standard Operating Procedures (SSOPs)
  • Conduct pre-operational and operational sanitation inspections
  • Identify deviations from HACCP, GMP, or SSOP requirements and report immediately to supervisors
  • Assist with corrective and preventive actions (CAPA)

Sampling & Testing

  • Collect product, water, ice, and environmental samples for microbiological and chemical testing
  • Perform basic in-house testing (e.g., temperature checks, pH, chlorine levels, sensory evaluation)
  • Ensure proper sample handling, labeling, and traceability

Documentation & Records

  • Maintain accurate quality and food safety records in compliance with regulatory requirements
  • Review production and sanitation records for completeness and accuracy
  • Assist with product traceability, lot coding, and recall readiness
  • Support internal and external audits by organizing records and providing documentation

Regulatory & Audit Support

  • Assist with regulatory inspections (FDA, local health authorities, customer audits)
  • Ensure compliance with seafood regulations such as FDA Seafood HACCP (21 CFR Part 123) or applicable local regulations
  • Support implementation of food safety and quality improvement initiatives

Training & Communication

  • Reinforce food safety and hygiene practices among production staff
  • Report quality issues, food safety risks, or non-conformities promptly
  • Work closely with production, sanitation, and maintenance teams to resolve issues
